Sunny Day Sandwiches
Ingredients:
- ½ cup light whipped cream cheese
- Eight 4-inch whole wheat flour tortillas
- 2 large carrots, shredded
- ½ cup shredded reduced-fat cheddar cheese
- 6-oz thinly sliced reduced-sodium deli ham
- 1 pkg. 8 oz. block cheddar cheese or American cheese slices
Directions:
- Spread cream cheese evenly over one half of tortillas.
- Layer each tortilla with carrots, shredded cheese and ham and place second tortilla on top and place tortilla on plates.
- Cut block cheese or cheese slices into triangles and place around outside of tortilla to create the sun’s rays.
