Sunny Day Sandwiches

Ingredients:
  • ½ cup light whipped cream cheese
  • Eight 4-inch whole wheat flour tortillas
  • 2 large carrots, shredded
  • ½ cup shredded reduced-fat cheddar cheese
  • 6-oz thinly sliced reduced-sodium deli ham
  • 1 pkg. 8 oz. block cheddar cheese or American cheese slices
Directions:
  1. Spread cream cheese evenly over one half of tortillas.
  2. Layer each tortilla with carrots, shredded cheese and ham and place second tortilla on top and place tortilla on plates.
  3. Cut block cheese or cheese slices into triangles and place around outside of tortilla to create the sun’s rays.
