Pumpkin-witches

Ingredients:
  • 1 cup cottage cheese
  • 1 cup pumpkin puree
  • 2 tbsp. Flour
  • 2 eggs
  • 4 tbsp. vegetable oil
  • ½ tsp. ground cinnamon
  • ½ cup chunky applesauce or apple butter (for filling/topping)
Directions:
  1. In a blender, combine cottage cheese, pumpkin puree, flour and eggs until smooth.
  2. Heat a non-stick skillet over medium heat. Spoon small amount of batter into the pan and cook each pancake for 2-3 minutes on each side.
  3. Spread one cake with applesauce or apple butter and place second on top.
  4. Cut “pizza-style” into fourths. Serve warm or cooled.
