Pumpkin-witches
Ingredients:
- 1 cup cottage cheese
- 1 cup pumpkin puree
- 2 tbsp. Flour
- 2 eggs
- 4 tbsp. vegetable oil
- ½ tsp. ground cinnamon
- ½ cup chunky applesauce or apple butter (for filling/topping)
Directions:
- In a blender, combine cottage cheese, pumpkin puree, flour and eggs until smooth.
- Heat a non-stick skillet over medium heat. Spoon small amount of batter into the pan and cook each pancake for 2-3 minutes on each side.
- Spread one cake with applesauce or apple butter and place second on top.
- Cut “pizza-style” into fourths. Serve warm or cooled.
